Lemon Cake

Hello April.  Exciting month.  Between the 20th and 23rd we celebrate spring and welcome our guests to our wonderful lemon retreat.  There’s no better way to connect to nature, the sea, revitalize both mind and body than in the company of friends.  Get ready to go on hikes and meditations, head to the beach, savor delicious lemon-inspired recipes, whirl through towns and museums, and meet the beating heart of local life.  We’ll show you the secret, offbeat sides of this majestic Greek island and its thriving community.  In the meantime, let’s all sweeten the season with a recipe for lemon cake!

LEMON CAKE RECIPE 

1 pound unsalted butter
2 1/2 cups sugar
6  eggs
6 cups  flour
1 tsp. baking soda
1 tsp salt
2 cups buttermilk
 ¼ cup lemon juice
¼ cup lemon zest
 2 tbs. vanilla extract
¼ cup confectioner’s sugar 

Mix all ingredients in a bowl.  Grease the inside of a round or Bundt pan and bake in 325 degree oven for 1 hour. Optional: Dust with 1/4 cup confectioner’s sugar for decoration.
